Free Copi samples at the 2022 Du Quoin State Fair

Guests at the De Quoin State Fair enjoyed free Copi samples and a cooking demonstration from students attending Southern Illinois University Carbondale. The students — studying Hospitality, Tourism and Event Management — cooked Copi for a live audience.

“My hope is that our culinary students will learn what a versatile and delicious protein that Copi is,” said James Garvey, the director of SIU’s Center for Fisheries, Aquaculture and Aquatic Sciences. “For the fairgoers, I hope that they discover that we have an opportunity to control a nuisance invasive species in Southern Illinois lakes and rivers in a positive and healthful way.”
