Copi Firehouse Fish Burger
- 2 pounds of Copi (thawed)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 tsp cayenne pepper
- Juice of 1/2 lemon
- Cornmeal for coating
- 1 tablespoon of olive oil
- 8 Burger bun (use your favorite)
- 1 lemon cut into 8 wedges
Thaw 2 pounds of minced Copi.
Place the thawed, minced Copi it in a large mixing bowl. Add the salt, pepper, cayenne pepper, and lemon juice Mix thoroughly.
Form 8 Copi burger patties by hand, covering both sides in cornmeal.
In a large pan, fry the Copi burgers in olive oil over medium heat. For 10-minutes (5-minutes per side).
Place Copi burgers on toasted buns. Top with your preferred leafy greens or cabbage. Serve with a lemon wedge on the side.
